ABSTRACT

Cereals are probably the most ancient basic staple foods ever used by humans; dating back to even before agricultural practices had been established. However, in the raw state, their consumption is not attractive due to hard texture, lack of taste, and low digestibility. As soon as fire was discovered, primitive man learned how to improve those characteristics: at first, by toasting the whole grains, and thus trying to at least partially separate the harder outer layers; and later on (~10,000 BC), by baking bread
