ABSTRACT
Cereals are a versatile and reliable source of foods. They are relatively easy to store and may be used to produce several food products, and are thus essential in the food production chain.
The postharvest steps are fundamental in the supply, which can be understood as a set of measures aimed at guaranteeing that foods reach the tables of consumers with the possible or necessary quality and at costs compatible with the financial capacity of the population.
