ABSTRACT

Bergamot was dened by its growers as the “green gold” because in the past even a small piece of land with Bergamot cultivation was sufcient to feed a family. “Small is beautiful” could be the motto for this Italian excellency, with an average plantation not exceeding 1.5 hectares, much smaller than extensive citrus plantations in the rest of the world, and bergamot fruits are still processed in relatively small extraction factories.
