ABSTRACT

Citrus bergamia Risso et Poiteau fruit essential oil is cold pressed from the skin (epicarp) of the whole unripe green fruit by the Pelatrice (pronounced “pel-a-tree-chee”) method (Di Giacomo and Di Giacomo 2002) of mechanically rasping the peel in a spray of water. The water is separated from the oil and reused for further spraying.
