ABSTRACT

Dietary intake is a significant factor in both primordial and primary prevention of type 2 diabetes through many avenues of influence as summarized in this book-all major macronutrients have been linked in one way or another to the etiology and prevention of type 2 diabetes. The focus of this chapter, though, is on research examining dietary fatty acids (FA) with clinical biomarkers thought to be central to the pathogenesis of type 2 diabetes, as well as studies on type 2 diabetes as an outcome.
