ABSTRACT

Meat consumption has risen dramatically and is likely to continue to increase into the future. As society gains higher incomes, they acquire the ability to purchase meat products such as poultry and pig (Fiala, 2008). Chicken is one of the most widely accepted muscle foods in the world with high quality protein, relatively low fat content, and generally low selling price (Maurer, 2003). The United States leads the world in chicken meat production followed by China, Brazil, Mexico, and Russia (Figure 5.1a). Provided that chicken are slaughtered according to halal (an Arabic term meaning permitted or lawful) requirements, the meat generally has very little or no cultural or religious bindings which allows increased chicken production and consumption worldwide.
