ABSTRACT
The greater part of the proteins have been found in seeds, and the details of the work on protein content and specific proteins characterized in Capparis are summarized in Table 8.1. There are known proteins globulin, glutelin, and albumin; a novel lectin with pronounced biological activity; a possibly genus-unique cysteine protease, proline betaine; and the amino acids aspartic and glutamic acid.
