ABSTRACT

An effective program for the verication and validation of the food safety program is, of course, a critical requirement of every food safety program whether developing a simplied HACCP program based on Codex guidelines or developing a structured and disciplined food safety management system. Verication is a term that has been addressed specically through Codex HACCP principle 6, which requires that procedures are established for the verication to conrm that the HACCP system is working effectively. Note that older versions of HACCP texts and articles may have principles 6 and 7 reversed. Requirements did not signicantly change just the order of the principles.
