ABSTRACT
Fruit juice adulteration, like any other food adulteration, is an economic issue. This means that any such process should generate an economic profit, which must not be forgotten. The market prices of the different products are a good starting point for an analysis. The main substances used for adulteration must be cheaper than the more expensive juices, starting with water and sugar, and, more recently, cheaper fruits.
