While other residues such as cysteine and histidine are susceptible to alkylation, these residues are protonated and resist modication under acid conditions. The susceptibility of methionine to oxidation by peroxides occurring in biopharmaceutical manufacturing is an important issue.6 The in vivo oxidation of methionine has been of greater interest as part of redox system.7 Table 9.1 lists some reagents used for the modication of methionine.
