ABSTRACT
The stability, physicochemical properties, and functional performance of emulsion-based delivery systems are highly dependent on the properties of the particles they contain (McClements 2005a, 2012a). Some of the most important particle characteristics that a food or ingredient manufacturer can control during the preparation of emulsion-based delivery systems are highlighted below. A more detailed discussion of particle properties in general is given in Chapter 3.
