ABSTRACT
Piperine (Fig. 7.1), an alkaloid is responsible for the pungency of P. nigrum L. and P. longum L.1 Piperine can be obtained from the oleoresin in peppercorns. Piperine consists of about 5-7 percent of peppercorns. It exhibits a wide variety of biological effects.
