It would be difficult to write about cooking for billionaires without bringing up the hors d’oeuvres or amuse-bouches. There are just so many occasions where the boss is going to have guests drop in or invite some friends over for cocktail hour. Most times, when you have a group of four or more there will be a proper cocktail time lasting one to two hours preceding dinner.
