ABSTRACT

As the global population continues to grow and consumers rely more heavily on processed and semi-processed food products, the demand for safe and healthy foods has become greater than ever before. Meat and meat products are not only good and important sources of many macronutrients, such as protein and fats, but also micronutrients such as vitamins and minerals including iron and zinc. Processed meat has several advantages over raw meat as they are convenient to prepare and serve; they have longer shelf-life and can be made into different forms of food with diverse tastes.
