ABSTRACT
Food protection covers both food defense and food safety. Food defense concerns intentional contamination and will be touched on briefly at the end of this chapter. Food safety concerns ensure that food has not accidentally become unsafe to consume. Foodborne illness, pesticides, chemicals used in production, reactions between the food and packaging, or other possible hazards, such as food additives or food allergens are all concerns of food safety.
