ABSTRACT

Although this book is not meant to be a nutrition textbook, some of the chapters have more detailed nutrition information than others; those interested in food policy may gain some exposure to nutrition perspectives and nutrition students may gain a perspective on food policy issues. We aim to illustrate how the past gave rise to the present. Today, we may struggle to perceive why people did not immediately embrace the benefits of pasteurized milk. Illuminating how current policies arise from choices made (or abandoned) informs us that just like knowledge, food policies are mutable, and subject to our change.
