ABSTRACT

The most important challenge of the agri-food industry is to supply safe and healthy food and guarantee food security. The United Nations Food and Agriculture Organization defines food security as “when all people, at all times, have physical, social and economic access to sufficient safe and nutritious food that meets their dietary needs and food preferences for an active and healthy life.” At present, over 1 billion people are malnourished and 60% of deaths in small children under 5 years old is due to lack of vitamins, minerals, and protein in their food (FAO/OECD, 2012). The situation of food security is expected to further deteriorate due to tremendous population growth, climatic conditions, and reduction of agriculture and natural resources (Langelaan et al., 2013).
