ABSTRACT

Almost the entire amount of rice in Bangladesh, Sri Lanka and in several rice-consuming states of present-day India (Assam, Bengal, Odisha, Tamil Nadu and Kerala) is parboiled. Substantial proportions of rice in a few other rice-consuming states of India and that in Nepal are also parboiled. Overall it is considered that about 55% of rice in India and about 65% of rice in south Asia is in the parboiled form. This is shown in Fig. 7.1. A fifth of world’s rice is parboiled.
