ABSTRACT

The word protein was used for the first time in 1838 by J.G. Mulder [Mulder (1839)] to describe the oxidized basic radical that, when combined in simple ratios with sulfur and phosphorus, should

reproduce the same substances found in silk, egg albumin and

serum, gelatin, and so on [Vickery (1950)]. Therefore, the name,

from late Greek (proteios or primary), describes its basic role in

chemistry [Branden (1991)].
