ABSTRACT

In distilled spirit beverages, water and ethanol are quantitatively the main compounds. The œavor compounds in distilled beverages are referred as congeners and provide particular sensory character in various spirits. The production procedures of many distilled beverages are de˜ned by legislation depending upon country. Therefore, variation may exist in the production process for the same alcoholic beverage in different countries; in European Community, the production is described in Regulation (EC) No 110/2008 while in United States of America (USA) in 27 CFR Chapter I Subpart C-Standards of Identity for Distilled Spirits.
