ABSTRACT

Given that dairy products have a high concentration of major nutrients in comparison with the energy that they provide, they are considered as nutrient-dense foods. The macronutient distribution of different dairy products is described in Table 1.1. The nutrient composition of yogurt is based on the the milk from which it is derived. The composition of milk varies with the diet, energy balance, health status, stage of lactation, breed, and age of the cow (Haug et al. 2007).
