ABSTRACT

Hippocrates, who is known as the father of medicine, in 400 BC mentioned that diseases could be healed by food and that the selection of appropriate foods would lead to the way to health, as mentioned in earlier chapter of this book. As the roles of these nutrients in the body are diverse and organically related with each other, if even only one nutrient is in excess or is deficient, then the nutritional balance will be hampered, causing damage to health. Therefore, if the knowledge of proper food and nutrition is actively reflected on the daily diet, many people can prevent foodborne diseases and maintain health. Therefore, South Korea and other countries in the world are aiming to identify physiological functional components that have not yet been revealed among the components present in foods.
