ABSTRACT

This chapter explains the role of fats, cholesterol, triglycerides and the omega-6 and omega-3 fatty acids in normal and abnormal body function, and the consequence of surpluses and deficiencies. It explains that ordinary metabolism fractures oxygen atoms into damaging free radicals that cause chronic medical disorders and can shorten lifespan, but that these are usually held in check by our own antioxidants; and that omega-3s reinforce those defenses to our health benefit. The chapter guides the reader to commercial laboratories that offer simple and affordable Omega-3 Index tests and interpretation.
