ABSTRACT

Food and beverage are generally the most expensive wedding elements, taking up a significant portion of the amount allocated to the budget category of reception and rentals. Most couples are not accustomed to making detailed menu decisions or serving large numbers of people; accordingly, the guidance and advice of a wedding consultant and caterer are sought. Wedding planners and caterers work as a team. While some vendors do not lire working through a liaison, others often prefer working with knowledgeable consultants. This is particularly true for caterers, who often become the planner by default if a professional wedding consultant has not been hired. Many consultants have ongoing relationships with caterers, saving both the couple and the caterer valuable time. This chapter offers an overview of essential considerations pertaining to food, beverage and the wedding cake.
