ABSTRACT

InChapter3,wearguedthatthestructuralspecificitiesofthe modernfoodsystemarelegaciesofindustrialcapitals'inability tosubordinateagriculturalproductionandfoodsupplytodirect industrialtransformation.Theconceptsofappropriationand substitutionwereintroducedtoanalysethestrategiesindustrial capitalshavefollowedtoreducetheconstraintsonaccumulation presentedbythebiologicalcyclesunderlyingfoodproductionand humannutrition.Theevolutionofthemodernfoodsystem aroundtheseparametershasimparteddistinctivecharacteristics, settingitapartfromothermajorindustrialsystems.However, inthischapterwesuggestthattheinheritedconfigurationof agriculture-industryrelationsisinastateoffluxandidentify severalleadingcausesoftherestructuringnowunderway.We focusinparticularonthenewtechnologicalbasewhichis emergingfromtheapplicationofbiotechnologiesinagriculture andfoodprocessing.Inaddition,onthedemandside,shiftsin consumers'perceptionsoffoodareanincreasinglyimportant factorofstructuralchange.
