ABSTRACT

You have probably heard expressions like ‘from farm to fork’, ‘from stable to table’ or ‘from gate to plate’. They are all used as umbrella terms for the food chain and referring to how foods are being produced, transformed and distributed from the farms to the final food consumer. Other kinds of agricultural products can be thought of in similar ways, such as fibre chains and bio-energy chains, although the reasoning in this chapter has the food chain as the point of reference.
