ABSTRACT

Food and beverage costs for weddings are significant, taking up a sizable portion of the amount allocated to the budget category of reception and rentals. Most couples are not accustomed to making detailed menu decisions or serving large numbers of people; accordingly, the guidance and advice of a wedding consultant and caterer are sought. Chapter 9 offers an overview of essential considerations pertaining to food, beverage and the wedding cake. Specific areas of discussion include catering proposals, dietary requirements, food and beverage trends, types of service, food and beverage costs and the wedding cake.
