ABSTRACT
Japan's economic development has been described as a modern day "miracle" by some writers. Part of any nation's development process is a change in tastes and preferences for food products as well as shifts from the so called "inferior" goods to those considered "superior." Throughout the world one of these shifts has traditionally involved the substitution of meat for starches. That additional meat can either be produced domestically by reallocation of resources, or imported.
