ABSTRACT

One of the major phobias many consumers struggle with is related to “chemicals” in the food supply and the many misconceptions of their source, use, safety, and how we all benefit from them. This chapter will illustrate that the fear of chemicals in the food supply is an irrational fear, and the growing tendency to eat “naturally” or “clean” are misguided marketing terms. It is irrelevant whether the chemical is either naturally occurring or synthetically produced, because toxicity is related to the exposure level and whether the chemical is stored in the body or broken down and excreted soon after exposure.
