ABSTRACT

Keng Hau people can observe the poultry farm in the Tin Sam area, which is run by a villager surnamed Lo from nearby Lo Uk Tsuen, and also the farm at Che Kung Miu, on their expeditions to Sha Tin Market. A traditional feature is the manufacturing of joss-sticks in the village of Sha Tin Tau. In the Sha Tin valley, paddy fields were in 1969 to be seen scattered around in the area. The New Territories are situated in the double-cropping area of Guangdong, and two crops of rice are harvested in the mountain villages high the Sha Tin valley. Liu Lang, who is a watercress farmer near the village of San Tin is a joint owner of a small orchard. Farmers who have spacious pig pens and who used to have a large number of animals, have today only a few left. Most farmers have a few hens and sometimes ducks for their own consumption.
