ABSTRACT

This chapter presents the historical origins of CLiCK (Commercially Licensed Co-operative Kitchen) from an insider/micro ethnographic perspective, as well as from other insider observations. Using these primary resources, the chapter critically analyzes the challenges faced in starting a shared-use commercial kitchen based on cooperative values and dedicated to food justice. Additionally, this chapter presents the historical origins of CLiCK from an outsider/macro perspective, including looking at the community context that shaped CLiCK’s origins and secondary sources focusing on the local/global food systems. Combining the micro and macro perspectives creates a more holistic, hence overlapping, understanding of the specific connectivity between the author’s experiences, CLiCK’s interpersonal dynamics, and the interagency and intercommunity ones that have both helped and hindered CLiCK’s origins and development.
