ABSTRACT

In composing a high-end Japanese dinner, chefs employ several cooking techniques—namely grilling, simmering, frying, and steaming—to appeal to different sensations on the palate. Furthermore, the choice of protein brings together the fruits of land and sea to underscore the importance of the country’s topography. In general, a meal is not considered complete without either rice or noodles. The many types and preparations of noodles attest to its importance in the culinary world. Exploring historical banquet-style dining with its focus on aesthetic appeal sheds further light on prominent characteristics of contemporary foodways.
