ABSTRACT

This chapter explains how to perform verification of products, processes and equipment. It describes the role of food safety manager and QA manager. The responsibility of the food safety manager and QA manager is to prepare validation/verification schedule, to appoint a Verification Team, to review validation/verification findings, and to appoint an external expert when required. Reviews of the hazard analysis, Hazard Analysis and Critical Control Point (HACCP) and any modifications, CCP monitoring records, corrective actions, verification records, observation of operations to check whether the HACCP is being followed and (if required) that records are maintained, and collection and testing of random samples are preformed by a regulatory body, a customer, private consultant or a certifying body.
