ABSTRACT

Chapter 6 addresses the design characteristics that make coffee shops and cafés successful. The scope of building or renovating coffee shops or cafés involves many professionals. While some establishments reside within an existing building, others are built from the ground up, utilizing various design professionals. Patrons have needs that they seek to meet with a visit to a coffee shop or café; therefore, the establishment should provide access, utility, safety and security, comfort, and engagement. How the building greets patrons and the first impression upon entering lay the foundation for the patron experience. Shops that connect with patrons through permeable storefronts let them glimpse what awaits them inside. Finally, the layout of the establishment should be functional for both patrons and staff.
