The organisation of the supply of vegetables and fruit, on which the consumer spends nearly £190 million a year, has remained substantially unchanged by the war. The Potato Marketing Scheme has been suspended and the import of some luxury fruits prohibited to save shipping space ; but the broad outlines of organisation remain the same as before the war. Fluctuations in price occur indeed from day to day and even from hour to hour ; so that the farmer can rarely be sure what his produce will fetch Not only does supply vary with weather but so does demand.
