ABSTRACT

This chapter discusses carbohydrate and its role in energy production. Readers are introduced to the chemical structure of simple and complex carbohydrates, and their role in dance performance and health. Glycaemic index and its relevance in dance are explored. The use of carbohydrate in dance, carbohydrate needs and timing of carbohydrate intake are discussed, with emphasis on differing intensity levels of the dance class as well as variations across the dance styles. Ways to optimise glycogen stores during class, rehearsals, exams and performances are also covered. Practical information on carbohydrate sources, portion sizes of carbohydrate rich foods, and options for meals and snacks are explored.
