ABSTRACT

This chapter looks at the importance of dietary fat for health and as a source of fuel. The chemical structure of fats, how this impacts on their use in the diet, and their many roles in well-being and performance optimisation are all discussed, with a focus on monounsaturated and polyunsaturated fats. Sources of fat in the diet are identified, and requirements are discussed. The role and sources of omega-3 fatty acids are explored in detail. A brief review of the evidence surrounding high fat and ketogenic diets is presented. Additional information (via sidebars) is included on cooking oils, food choices and dietary fat myths.
