ABSTRACT

This chapter explores the levers for environmental sustainability in the coffee and tea industries. A primary focus of this chapter presents the data from research with the coffee and tea farmers on their perspectives. Key insights from the farmers point to the essential role of institutions and certification programs in supporting environmental sustainability through technical assistance and training. The goal of this chapter is to define and outline the foundational aspects of environmental sustainability and to provide specific examples of how this is operationalized from the farmers' experiences.
