ABSTRACT

This chapter outlines the different types of products used in the included menus as well as guidelines and expectations for each. Some of the products may be listed under more than one area depending on how they are presented or implemented (and some of the best products cross over between styles). The specific expectations (guidelines) for all of the products are presented in an easy-to-read card format that can be reproduced for students. Students can become so engulfed in the products and the criteria for creating them that they do not focus on the content being synthesized. Most frustrations associated with the varied products placed on menus can be addressed proactively through the use of standardized, predetermined product guidelines. Some teachers prefer to expose students to products as students experience them on their menus. Some teachers may choose to reproduce each menu's specific product guidelines on the back of the menu.
