ABSTRACT

Serotonin is a neurotransmitter that is your primary defense against depression and anxiety. It’s made from the amino acid tryptophan, which comes from animal protein, like dairy products and meat. Tryptophan is quickly converted in the body to 5-hydroxytryptophan (5-HTTP) and from that, to serotonin. Many children eat too little protein and too much sugar, a diet that promotes stress reactions that can lead to chronically elevated levels of the stress hormones. When children’s breakfasts consist mostly of simple carbohydrates (e.g., boxed cereal, breads, sugared drinks) they lose energy and concentration by midmorning. Protein is the best fuel for mental effort the way complex carbohydrates are the best fuel for physical exertion. Add some protein to their breakfast. Protein is metabolized a lot more slowly than simple carbohydrates, resulting in more stable blood sugar and insulin levels.
