ABSTRACT

Citing numerous studies, the Introduction establishes how eating meat and dairy is bad for human health and the environment. There’s a call for action on the community level, in raising awareness about vegan culture and establishing local commons to craft veggie foods. Schoolyard gardens and community centers could include kitchens for learning purposes. City properties could be repurposed to cook vegan foods employed by entrepreneurial minority men and women. Key research is cited about the environmental harms of animal farming and the benefits of animal ethics in education and the arts. There is discussion of how culture or cognitive dissonance shapes perceptions. Emphasis is placed on ecological citizenry with a focus on improving the future health of people and the planet.
