ABSTRACT

AM has been used to make a variety of food items such as chocolate, cake, sugar candies, fish and meat. It has also been used for food-related items such as cookie cutters and couple figurines for on top of a wedding cake, and it has been used for prototyping purposes. Customization is a key feature of AM for food, such as for athletes and elderly people. This customization can be for nutrition and also for chewability. Material extrusion is the main method used, but there are some challenges related to rheology. Binder jetting, material jetting and powder bed fusion are also used. There is much research and development taking place to develop more materials and better AM processes. The industry overall is in a very early stage, and while 3D food printers exist, the acceptance of 3D printing in general is still limited.
