ABSTRACT
New evidence—hundreds of interviews with aspiring tenants and their obituaries as well as testimony before a royal commission given in Camera—provides a nuanced perspective of what mattered most in recruiting licensed victuallers. Comments on candidates, their backgrounds, trade experience, behaviour during the interview and wives’ contributions, together with other factors influencing the ultimate decision—all afford insight into the unwritten criteria involved in deciding what candidate ultimately secured tenancies.
