This chapter deals with the City's trading function - the handling of goods, the transfer of rights and their physical environment.
The distinction between the commodity and produce markets discussed in this chapter is in some degree arbitrary. We use the term 'commodity markets' to designate all those markets in food or raw materials which are internationally traded. This incorporates both markets which still handle actual produce and those which are wholly or primarily markets in 'rights'.
