THE writer of the book On the Natural World states his opinion that the herring is quite a small fish living in the Western Sea, which lies between the lands of Britian and Germany,. 1 Almost every single type of marine fish has its own season when it is good and appetizing; this is also true of the herring, which is at its best from August till the end of October. 2 It remains a well-known fact to everyone who eats it that during this period the herring is endowed with its finest flavour. It taste most delicious just after it has been caught, but when salted it can stay in good condition for the consumer longer than any other fish apart from salmon.
