ABSTRACT

IF you have no hops, then take the young shoots of bog myrtle, which resemble those of juniper bushes. Heat these with the greatest care until a pure flavour remains, with a moderate bitterness. Everything requires its proper strength and so these shoots of myrtle need to be very thoroughly heated. If there are no dregs of beer, take some baker's yeast; when this is dissolved in hot water and poured on, it will have almost the same effect as the dregs.
