On brewing mead in the Polish or Lithuanian manner

TAKE a certain amount of good honey, pure and unadulterated, the proportion to be determined by the quantity of mead you intend to brew: for example, ten pounds of honey to five gallons² of water, more or less, according to the strength required. Heat the water in a cauldron, or a large copper or bronze cooking-pot, and pour the honey in.
