The food industries are linked on the one hand with agriculture and the docks, and on the other with the general consuming public. Their links with agriculture are twofold, as not only are many of their raw materials home-produced, but much of their industrial wastes go back to the fields in the form of animal feeding stuffs and fertilizers. Wheat is milled to separate those parts of the wheat grain which are more suitable for human consumption, from the remainder-such as the husk-which is suitable for animals. Apart from their dependence on transport facilities, flour mills have few special needs or attributes. Their labour demands are small, they produce little or no waste and are not noisy or smelly. Self-raising flour is made by mixing particular grades of flour with sodium bicarbonate and an acid ingredient such as acid calcium phosphate, to provide the necessary carbon dioxide to aerate the dough without the use of yeast.
