ABSTRACT

This chapter discusses the hospitality industry’s approaches towards environmental, social and economic challenges. The food industry, which is closely related to the hospitality industry, was developed to meet the needs of developed countries, where technological changes and the growth of domestic markets started industrialised agriculture. Naturally, the provision of hotels falls within the general context of hospitality, an aspect of human activity which has important social dimensions as well as meeting the physiological needs of shelter and comfort. The focus on sustainability is growing considerably, since the term “has been one of the hospitality industry’s biggest buzz words for years. In response to the recognition that a growing segment of travellers values conservation and preservation, another important organisation was launched that provided further impetus to hospitality organisations to increase their sustainability quotient. The hospitality industry has been historically criticised for being harmful and neglectful about issues such as the environment and culture.
