ABSTRACT

Understanding the supply chain of foodservice businesses is crucial to reducing their environmental impacts and maximizing social and economic benefits, both for the business and the wider community. This chapter provides an overview of where food comes from with respect to food production and details the structures and systems within which food is produced for eventual consumption and provides an understanding of the context within which the supply chains of specific food businesses are located. The chapter concludes by observing that achieving the UN Sustainable Development Goals (SDGs) in the global food system will require enormous and far-reaching changes.
